Saturday, March 21 – New Orleans
Dinner: Crawfish Étouffée – Classically prepared Étouffée with Louisiana crawfish simmered in a rich Cajun sauce served with rice and French bread.
Dessert: Beignets – French Quarter-style donut topped with powdered sugar and served with raspberry sauce.
Saturday, March 28 – Puerto Rico
Dinner: Arroz con Gandules y Pernil – A celebration of Puerto Rico’s national dish. Rice with pigeon peas seasoned with pork belly and homemade sofrito served alongside slow-roasted pork shoulder.
Dessert: Flan de queso, caramel topped flan
Saturday, April 4: North Atlantic Coast
Dinner: Seafood Boil – An assortment of shellfish such as lobster, shrimp, mussels, and crab with kielbasa sausage, corn, and red potatoes all steamed together in a special mixture of seasonings.
Dessert: Warm wild blueberry cobbler topped with SDSU ice cream
